Protein Queso

Sundays are for football...and football snacking! 🤭 This delish Protein Queso is macro-approved and perfect for watching the game. 

Makes 5 servings
90 calories / 5F / 2.5C / 10P / per serving 

1 cup 2% cottage cheese
1 Tbs. skim milk 
2 Tbs. Rotel Original Diced Tomatoes & Green Chilies 
1 tsp. Siete Mild Taco Seasoning
1 garlic clove, finely minced
2.6 oz. Monterey Jack cheese, freshly grated
Toppings:
½ Tbs. Rotel Original Diced Tomatoes & Green Chilies 
Pinch cilantro, finely chopped


1. In a food processor or high-powered blender, add cottage cheese, milk, and taco seasoning. Mix until smooth.

2. Heat a small skillet over medium-low heat. Spritz with cooking spray and add garlic and tomatoes. Cook for 1 minute until fragrant. Add cottage cheese mixture and stir until warm. Stir in grated cheese until melted. If texture is still not smooth enough, pour the cheese mixture back into the food processor or blender and mix until smooth.

3. To serve, transfer queso to a medium-sized bowl and top with one tablespoon of tomatoes and a pinch of cilantro. Serve warm with tortilla chips or vegetable crudite for dipping.
