Peanut Butter Lover's Ice Cream

Happy National Ice Cream Day! I may or may not have enjoyed this rich, peanut buttery soft serve for breakfast this morning! 😋 Yep, you know it! #CSEchallenge approved! 🙌🏻🙌🏻 You’re welcome! Recipe for you below. This recipe is included in the Spring 2019 Clean Simple Eats Meal Plan.



  • 1/2 cup unsweetened almond milk

  • 1/2 cup low-fat cottage cheese

  • 1/4 cup powdered peanut butter

  • 1 serving @cleansimpleeats Simply Vanilla Protein Powder

  • 150g frozen banana slices

  • 2 Tbs. natural peanut butter

  • 1/4 tsp. xanthan gum

  • 160g ice cubes

Optional topping (not included in macros):

  • Chocolate chips

  • Whipping cream

  • Walden Farms Caramel Syrup


1. Add all of the ingredients to a high-powdered blender. Blend until thick and smooth.

2. Pour into bowls and add topping of choice.

*Place in the freezer for 1-2 hours if you want it more firm. Eat immediately for soft serve texture. 👍🏻 Don’t freeze more than two hours or it will be too solid.
