BBQ Bison Burger
Makes 4 servings

12 oz. lean ground bison
Dash onion powder
Dash garlic powder
Sea salt and pepper
4 whole grain buns
Sides & Toppings (per serving):
1 Tbs. mozzarella cheese, shredded
2 tomato slices
50g onions, chopped & sautéed
Butter lettuce leaves
1 Tbs. Stubbs BBQ sauce
1. Preheat grill to medium-high heat.
2. In a medium-sized mixing bowl, combine the ground bison with onion powder, garlic powder, salt and pepper. Divide into four, three ounce portions and form into burger patties. Gently press thumb down in the middle of the patty to make the middle slightly thinner than the outside edges.
3. Place burgers on the grill and cook about 5-7 minutes per side. Transfer to the top rack or to a plate and immediately top with cheese.
4. While burgers are cooking, chop onions and add them to a greased frying pan over medium-high heat. Cook until tender and slightly brown. Toast the buns by adding them to a greased frying pan over medium heat. Toast both sides. Prepare all the veggies and other toppings. Serve burgers on toasted bun with all toppings listed.
Mustard-Fried Bacon Burger
Makes 4 servings

10 oz. lean ground beef
2 tsp. Worcestershire sauce
2 tsp. yellow mustard
2 tsp. dried minced onions
1⁄2 tsp. garlic powder
1⁄2 tsp. sea salt
Dash black pepper
4 slices nitrate-free turkey bacon
1 sliced sweet onion
4 whole wheat hamburger buns
Butter lettuce
8 tomato slices
12 dill pickle slices
Toppings per serving:
1⁄2 Tbs. olive oil mayo
1⁄2 Tbs. ketchup
1. Heat grill to medium/high heat.
2. Add ground beef, Worcestershire sauce, mustard, dried minced onion, garlic powder, sea salt and pepper to a bowl. Mix with hands until well combined. Weigh the mixture and divide by four. Form four equal-sized burger patties.
3. Place the burgers and bacon slices on the grill. Cook the burgers for 5-8 minutes per side and cook the bacon until crispy.
4. Heat a frying pan to medium-high heat. Grease and add onion rings to the pan. Stir and flip until soft and golden on all sides.
5. Assemble burger by layering the bottom bun, lettuce, burger patty, tomatoes, pickles and onions. Spread mayo and ketchup on the top bun and place on your burger.
Classic Protein Style Burger
Makes 4 servings

18 oz. sweet potatoes
16 oz. lean ground bison
2 Tbs. dried minced onion
1 tsp. minced garlic
Dash ground cumin
Dash sea salt
Dash black pepper
8 butter lettuce leaves
4 tomato slices
4 red onion slices
4 dill pickles
4 tsp. yellow mustard
2 Tbs. + 2 tsp. ketchup
1. Preheat the oven to 400 degrees. Move the oven rack to the center of your oven. Wash, peel, and cube sweet potatoes into bite-sized pieces or fries with a sharp knife. Spread out in a single layer onto a baking sheet lined with parchment paper. Spray the tops with cooking spray and sprinkle with sea salt and other seasonings of choice. Bake for 20 minutes, flip and bake an additional 15-20 minutes. Potatoes should be fork-tender. Weigh the potatoes and divide the weight by four to get the amount needed to fill each serving. Heat a grill or skillet over medium-high heat.
2. In a large bowl, mix raw ground bison, dried onion, garlic, cumin, salt and pepper together. Weigh the mixture and divide into equal portions for each serving. Form into burger patties, making them thinner in the middle and thicker around the edges.
3. Place burger patties on a greased skillet or grill and cook for about 4-5 minutes per side. Check centers to make sure there is no pink. Remove from the grill.
4. Assemble the burgers using the lettuce leaves as a bun. On top of a lettuce leaf, place burger patty, one slice of tomato, one slice of red onion, one pickle, one teaspoon of mustard, and one teaspoon of ketchup. Top with another leaf of lettuce.
5. Enjoy one serving of roasted sweet potato fries on the side with an additional one teaspoon of ketchup per serving.
Guacamole Turkey Burgers
Makes 4 servings

16 oz. lean ground turkey
½ cup yellow onion
½ cup red bell pepper
1 tsp. fresh, minced garlic cloves
1 tsp. cumin
½ tsp. sea salt
½ tsp. chili powder
4 whole wheat Sandwich Thins
Butter lettuce
2 tomatoes
4 dill pickles
4 Tbs. ketchup
2 Tbs. mustard
4 oz. guacamole
1. In a large bowl, mix the ground turkey, onions, bell peppers, garlic, cumin, sea salt and chili powder together.
2. Form into equal burger patties, one for each serving. Place on a skillet or grill over medium heat for 5-8 minutes per side.
3. Place each burger patty on a bun and top with butter lettuce, two tomato slices, dill pickles, one tablespoon of ketchup, a half tablespoon of mustard, and one ounce of guacamole.
Easy-Oven Baked Cheeseburgers
Makes 4 servings

8 oz. lean ground turkey
4 oz. lean ground beef
¼ cup yellow onions, chopped
½ tsp. sea salt
¼ tsp. garlic powder
¼ tsp. dried minced onion
4 whole wheat hamburger buns
2 oz. shredded cheddar cheese
4 romaine lettuce leaves
8 tomato slices
4 red onion slices
16 pickle chips
Burger Sauce:
1 Tbs. olive oil mayo
1 Tbs. nonfat, plain Greek yogurt
1 Tbs. ketchup
½ Tbs. sweet relish
½ tsp. white vinegar
1. Heat oven to 400 degrees.
2. Add ground turkey and ground beef to a frying pan or skillet over medium heat. Add seasonings and yellow onions. Cook until the meat is brown and onions are tender.
3. Lay the hamburger buns out on a baking sheet. Evenly distribute the cooked meat over the top of the buns, then add the cheese. Place the top of the bun on each burger and pop into the oven. Cook for 10 minutes or until the buns are crispy and the cheese is melted.
4. While the burgers are baking, prepare the toppings. Slice the lettuce, tomatoes, onions and pickles. Add all the Burger Sauce ingredients to a small bowl and whisk until smooth. Weigh the sauce and divide the weight by four to get the amount needed to fill one serving. Set aside.
5. Remove the burgers from the oven and add the sauce and toppings. Enjoy!
Pepper Jack Bison Burgers
Makes 4 servings

Dash sea salt
Dash black pepper
2 oz. shredded pepper jack cheese
4 whole wheat hamburger buns
4 Tbs. ketchup
4 dil pickles
1 red onion
1 tomato
Butter lettuce
1. Preheat oven to HI broil.
2. Combine the ground bison with salt and pepper. Form into four, three ounce patties. Line a rimmed baking sheet with foil, then spray with cooking spray. Place the patties on teh baking sheet. Broil in the oven on teh middle rack for 5-6 minutes per side. Add 1/2 ounce of cheese to each patty and broil another 1-2 minutes until the cheese is melted.
3. Toast buns if desired. Spread one tablespoon of ketchup on each bun; add mustard if desired. Add burger patties and remaining toppings to the middle.
